Comfort food, but make it elevated. These Creamy Goat Cheese Stuffed Sweet Potatoes are your go-to for when you want something warm, hearty, and effortlessly gourmet. Rooted in Kenyan ingredients and enriched with Brown’s farm-fresh Chevre, this dish is proof that wellness and indulgence can go hand in hand. Whether you’re preparing for guests or treating yourself midweek, this one’s always a win.

Ingredients

2 medium sweet potatoes, scrubbed clean

100g Brown’s Chevre (Goat Cheese)

1 tbsp utuuru honey (plus extra for drizzling)

1 tbsp extra virgin olive oil

½ tsp ground cinnamon

Salt and black pepper, to taste

1 tbsp fresh thyme or rosemary (optional)

1 tbsp roasted cashews or walnuts, chopped

Handful of baby spinach or microgreens, for garnish

Preparation

Bake the Sweet Potatoes:

Preheat oven to 200°C (390°F). Prick each sweet potato several times with a fork, rub lightly with olive oil and a pinch of salt. Bake on a tray for 40–45 minutes or until soft and caramelized.

 

Prepare the Chevre Filling:

While the sweet potatoes are baking, mix Brown’s Chevre with 1 tbsp utuuru honey, cinnamon, and a touch of black pepper until creamy.

 

Slice and Fill:

Once baked, slice the sweet potatoes down the center (don’t cut all the way through). Gently mash the interior with a fork to loosen it, then spoon in the Chevre mixture.

 

Garnish & Serve:

Drizzle with more utuuru honey, sprinkle with fresh thyme or rosemary, toasted nuts, and a few leaves of baby spinach or microgreens.
